What if we ask you for music that you’ve never played before?

This is not a problem at all. I just would appreciate it to know about it in advance. I once had a couple ask me at the last minute to play their favorite piece. They had no sheet music and all they could provide me with was the melody. I memorized the melody and performed an improvised version for them on the spot.
